Industrial pectin is obtained from the peel of citrus fruits (lemon, lime and orange) and from apple pomace. The choice of raw materials is due to the fact that it contains the highest quality pectin available in large enough quantities.

Slow set pectin, highly esterified, sugar standardized. It is a white powder extracted from citrus peel.

Applications:

Gelling agent (jams, jellies, marshmallows, marmalade);

Advantages:

- Transparent jellies with excellent taste
- Relatively long setting times
- Possibility of filling large containers

Dosage and method of administration:

For jams and jellies - 0.3-0.5%
The optimal dosage depends on the PH level.

We recommend dissolving in water before adding to basic fruit mixes.

Highly esterified pectins

Pectins with a degree of esterification (SE) of 50% and higher are called highly esterified. They are capable of forming gels in aqueous systems with high soluble solids and low pH levels. Higher SE promotes gelling in systems with lower soluble solids and higher pH. This means that when choosing a pectin for a particular application, always take into account the permissible dry matter content and the pH of the finished product.

The SE of industrial highly esterified pectins usually ranges from 58 to 75%. For the formation of gels using these pectins, the soluble solids content must be above 55%, and the pH level must be in the range of 2.8-3.5.
